What the [bleep] is for dinner . . .

OF.

SCHOOL.

Next year we will end in May, unless there are a bunch of hurricane days. I think I will like that, because this little ‘one dangling week in June’ thing feels superfluous.

It’s also a rough combination of final exams and Dance Show week, which means a weird schedule and extra evening rehearsals just when no one is in the mood for anything extra. And then let’s throw 8th Grade Graduation in there! And two different “last days” of school between A/C and G which OBVIOUSLY have to be half days!

(I find it humorous that my prior summer plan had us LEAVING FOR HAWAII ON SUNDAY, the morning after said Dance Show. I ended up changing it because of A deciding to take summer geometry, but also I am now soooooo happy this is not happening until mid-July. We need a lower key palate-cleanser of a month.)

I’m going to combine PrepDish this week with my own variations.

TONIGHT: Salmon miso rice bowls with avocado, cucumber, seaweed and edamame

MONDAY/TUESDAY: Italian marinated chicken with pita and salad

WEDNESDAY/THURSDAY: Ground turkey tostadas or taco salad

FRIDAY: Something easy from the freezer (and maybe Josh and I will go out). Or maybe we’ll all go out! Last day of school probably deserves some recognition even if we already did our traditional Melting Pot night.

SATURDAY: DANCE SHOWWWWWW! (And maybe out somewhere casual afterwards . . . something like Culver’s maybe)

SUNDAY: TBD but possibly lamb chops if we are feeling fancy

And now to see if G will make good on her offer to accompany me to Trader Joe’s . . .

    We have 2 week left of school, but i’m in a work sprint with my nonprofit boards, so I’m out 3 nights! So takeout when I’m out, and then salmon bowls, pasta with meat sauce, and something involving chicken for the nights I’m home:)
    I’m sorry about your mood, it doesn’t help to know that it’s perfectly normal, both for this season of the year with school aged kids AND after a loss. There is a big letdown, after the initial grief mixed with adrenaline.

    Still being in school in June (we have two more weeks left) is always so hard when all my blog buddies are like SCHOOLS OUT FOR SUMMER! They are some LOOONG two weeks.
    I am similarly soooo busy right now. It’s a lot. I’m just trying to get through. Today I have a bit of a reprieve, after a crazy day yesterday, and I’m trying to really soak it up. The reality is, that when I am going this hard for this long, it’s really hard to decompress effectively. My body and mind think they need to be DOING SOMETHING.
    I recently read this article about people finding relief from menopause and PPMD symptoms with a combo of Allegra and Pepcid-AC. I just wanted to send it along in case it’s of interest to you. My friend who is dealing with perimenopause, but found that HRT made her feel worse emotionally, was excited to give it a try.

    We have 9 days. Daughter takes her last exams on Tuesday. I can’t believe she’s going to start high school this fall!

    I’m making a (no mayo) Mediterranean tuna/pearl couscous salad tonight, slow cooker chili, chicken salad, pumpkin soup, and then we have homemade pizza on Friday (we’ve been doing this for 23 years with up to 40 people!). No ideas for the weekend yet, it will depend a bit on the kids’ activities. It’s coming into winter here which is why my meals might be a bit different!

    I have friends who are moms of dancers (they’re not the cliche dance moms, which is why I worded it that way!) and it is almost like a part-time job doing all the transportation to practice/rehearsals/events/competitions plus all the outfit purchases/alterations/last-minute-fixes. It exhausts me just watching on from the outside.. so I’m glad you’re not flying the day after!

    Our kids are in until the end of June but it is still bananas. All the things! this week is my daughter’s 13th birthday and she picked a pub to go to for her birthday that we went to before a musical we went to. It’s funny what they will remember and want to go back to!

    I LOVE a good dinner plan and this week:
    Sun (today): mustard chicken, raspberry and pecan salad from America’s Test Kitchen – really delicious – all loved except my youngest who was being fussy about greens. it happens
    Mon: smash burgers from NYT cooking
    Tues: dip night – trying this – I picked out and eggplant dip from ATK and a cottage cheese one from NYT and going to get out some dippers like pita and make it a meal
    Wed: Halloumi tacos from NYT Cooking
    Thurs: out
    Fri: Hoisin Chicken skewers from Ricardo -an amazing Quebec based chef and business (highly recommend ricardocuisine.ca)

    A good mix of quick to prepare and fun new meals – here’s hoping!

        I for sure I am extra on the meal planning. lol! For me cooking is definitely my hobby and I love finding good recipes (such a fun part of my planning rituals) – it’s a huge boost to me to try new recipes. Thankfully my family is pretty accommodating.

    We hosted family on Saturday, and had leftover Chinese takeaway yesterday, so we’re having the hosting leftovers tonight. My friend is trialling some Indian family recipes and I’m in her beta tester group so daal on Tuesday. Maybe something with sweet potatoes Wednesday. We moved house recently and have a little green grocer/shop around the corner so I feel like I don’t need to plan meals so intensely these days.
