COVID19 Weekend

Day 41: A Simple Saturday

April 25, 2020

Both of us are off this weekend, so that is good. Unfortunately, our stretch of fairly miraculous weather seems to be coming to an end, so we will try to squeeze in some outside time early. Bikes/skateboard/walk . . . if there isn’t rain by the time everyone is up.

Also on the docket:

  • some home organizing/cleanup (very necessary!)
  • email/life organizing/cleanup (have not done a proper weekly review in too long)
  • meal plan (TBD if actual grocery trip will be today vs tomorrow – have to spread out the excitement, you know?)
  • Takeout Night
  • possibly a nap while G takes hers (fave weekend indulgence)
  • not much else

I mean, obviously.

BB, reading, and meditation will fit in somewhere. My skincare routine is getting more and more limited as I wait for my package to arrive! (PSA: Sephora‘s spring sale has started, one week too late for my order. They are offering 10-20% off orders depending on loyalty level. #(*&!#!*@! But maybe others can benefit from my mistake.)

OHH!!!! We now have a working oven!! We had a power outage/surge and it came back to life. Lockdown miracle!? Or just our fault for not checking the fuses in the first place. Anyway . . . what should I bake!? Considering some RFES superhero muffins. So good.

I don’t have much else to report right now. I think tomorrow I will share a day of FOOOOOOOOD/eating. Because why not. Here is a video of G taken while everyone was watching Big on Thursday night. She was like this for . . . a while.

I use a series of muffin recipes from Pinch of Yum. They are all basic and I tweak as I feel like it. They remind me of the SuperHero muffins you mentioned, but are an extremely fast recipe (I throw everything in the food processor). I have made these, on average, 2-3 times per month for the last few years! They freeze really well, too.

Sometimes I use apple or pumpkin. Sometimes I use dates to sweeten, sometimes maple syrup, sometimes I just use a bit of brown sugar.

Also, not sure if you’ve tried making them, but I LOVE black bean brownies. Again, they’re a recipe where you can throw everything in the food processor. So convenient and fast.

Cinnamon swirl bread on the docket here. https://www.kingarthurflour.com/recipes/cinnamon-swirl-bread-recipe
Also plain sandwich bread because it turns out if most of your household would prefer PBJ sandwiches 24/7 you need a lot of bread.

Sorry/not sorry it’s getting too hot because maybe some of that heat will spread north where it’s threatening to snow AGAIN.

I wish I could send you some heat!!! (I actually don’t mind the heat – it’s the return of the daily thunderstorm that i’m dreading. summer weather in FL is like — threatening a storm, storm, and post-storm. those are the major variations. )

Woah. I’ve just realised that Calico Critters are the same as Sylvanian Families. Mind blown! I decided to google them (I knew we didn’t have them here), and they looked identical – then I found a website that said they’re the same thing. Interesting fact for the day!

We are waiting for it to cool down. It’s still close to 30C here most days, it has been an endless summer.
